Recipe: Angellica Bell's Christmas Cupcakes

If you didn’t know before, I love Christmas!
Making fun things in the kitchen adds to the build-up and excitement especially is you have little ones. These edible Christmas tree cupcakes trees are fun to make, and tasty. All you have to do is select your favourite cupcake flavour – chocolate, vanilla, red velvet or even carrot! The choice is yours.
Cupcakes
For this part I’m going to say make your own go-to recipe. You’ll have one I’m sure. If you don’t have much time, cheat and buy the easy-mix ones! My favourite are the Betty Crocker packets! Shhhhhhhhhh!
Icing
60g unsalted butter
90gam cream cheese
1 tsp vanilla essence
240g icing sugar sifted
Christmas Trees
1 bag of dark green candy melts (you can order these online if your local supermarket don’t have them in stock)
Pretzel sticks
Yellow fondant icing (roll it out and using a small star cutter, cut out the stars for your tree)
Sprinkles
Shredded sweetened coconut flakes
Method
- Make your cupcakes and let them cool completely.
- Now make your Christmas trees! Melt your green candy melts according to the instructions on the packet. Once it’s at a smooth creamy consistency spoon the mixture into a piping bag. Sometimes I add a teaspoon of sunflower oil to make the consistency easier to work with.
- Place your pretzels on a baking tray lined with grease-proof paper, leaving a gap between them. Pipe the candy melts over the sticks in the shape of a tree. As soon as this is done, pop the stars on the top and use the sprinkles for decoration. Place them in the fridge for them to harden.
- Now you can make your frosting. Whisk together the butter and cream cheese, add the vanilla then slowly add the icing sugar making sure it doesn’t go everywhere!
- Once you’re icing is done and dusted, frost your cupcakes and sprinkle with coconut flakes to give a snowy festive scene. Carefully release your trees from the baking sheet and push the bottom of the pretzels into your iced cupcakes.
