Recipe: Chocolate Chip Banana Bars

Another weekend treat from Scala Radio's Saturday Breakfast Show host Angellica Bell

I have to admit, I’m a bit over banana bread but needed to use up over-ripe bananas that had been sat in the fruit bowl for the past week! So, I went searching for something different and found this recipe online from a site called Butter with a Side of Bread. I must admit, the finished result went down a storm in my house and at my neighbours across the road! I’m guessing that’s because it’s full of chocolate chips. This is so easy to make and can be eaten any time of the day!

Ingredients

5 very ripe bananas (approx. 1 2/3 cup)

¾ cup brown sugar

¼ cup sunflower oil (or any oil you like to use)

¼ cup of milk

2 eggs

1 ¾ cup flour

1 tsp baking soda

½ tsp salt

1 tsp cinnamon

1 cup mini chocolate chips

Method

Pop your oven to 175C or 350F and grease a 15x10.5 baking tray.

Mash your bananas well, then stir in the brown sugar, oil, milk and eggs until mixed together.

Add all your dry ingredients and stir until combined. Fold in ½ of the chocolate chips.

Pour your batter into the prepared tray and then sprinkle the remaining choc chips over the top.

Bake in the oven for about 20 minutes until a skewer inserted in the centre comes out clean.

Let the cake cool completely before chopping into squares (mine made 24!)
