Angellica Bell shares her recipe for a favourite banana cake

Ingredients

150g unsalted butter, melted

225g plain flour

1 tablespoon baking powder

1/4 tsp salt

3 ripe bananas

150g soft light brown sugar

2 large eggs

60ml natural yogurt

1 tsp vanilla extract

Method

Turn your oven to 170C.

Grease and line a deep cake tin which measures 20cm.

In a bowl put in the flour, baking powder and salt and give it a whisk.

In another bowl mash your bananas then add the melted butter, sugar, eggs, yogurt and vanilla extract.

Add the wet ingredients to the dry mixture and combine until fully incorporated.

Pop the cake mixture into the prepared baking tin and bake for 40-50 minutes.

Once done (keep an eye on it) let it cool in the tin for 10 minutes then place on a wire rack to cool completely.

For the topping, I made a simple cream cheese frosting.

Simple Cheese Frosting ingredients

200g icing sugar

100g very soft slightly salted butter

100g cream cheese

1/2 teaspoon vanilla extract

Blitz these all together. I like to sift my icing sugar to avoid lumps and vanilla extract is optional so don't worry if there's none in the house.

Also adjust the ratio of butter to cream cheese depending on what you like, no hard and fast rules! I decorated my cake with bananas and crushed pecans.
