The Great Scala Cake-Off: Angellica Bell's Sweet Potato and Walnut Cake

Every Tuesday Penny is digging into the baking background of her fellow Scala presenters and Masterchef winner Angellica Bell was the latest presenter to share her baking tips in the Great Scala Cake-Off.

What is your favourite cake?

I'm not going to jump on Charles Nove's bandwagon because I do like a lemon drizzle. And that's a popular one. There are certain cakes that are staples that we love - lemon drizzle and chocolate.

The cake that I love to make, and also like to eat is a carrot cake. Carrot Cake is one of those cakes that does divide the room because it's got carrots in it. Simple as that.

My friends have an allotment. And a couple of years ago, they brought me like a big marrow. And they said do something with it. And I did actually make a marrow cake. And it was delicious. And that's what I like about the carrot cake.

It depends on how you make it as well because I put pineapple in mine to keep it light and moist. There's so much versatility with vegetables in cakes.

One that I am going to be making soon that's on my list is a sweet potato and walnut cake.

Angellica Bell's Sweet Potato and Walnut Cake

I'm just making it this as I go on now. That's how I like to bake. I just go with it. My grandma was a huge cake maker, and she would just throw things in the bowl. That's what I do too. So obviously before I bring you a slice, I'll make sure that the recipe is on point, I promise!

I'm going to add a few spices in there. We love a bit of cinnamon and nutmeg, sweet potato, Herb spices, obviously you've got your eggs. The walnuts give it a bit of a crunch.

Use oil because I think when you put oil in cakes, it makes them lighter.

I love a bit of cream cheese in my topping, but I'll put in a little bit of mascarpone as well. A bit of richness, which is lovely. I'll add a little bit of cinnamon in that as well.
