The Great Scala Cake-Off: Mark's Energy Boosting Forrest Flapjack

The world’s most remarkable flapjack!

On Tuesday 9th November, Scala Radio Mark Forrest joined Penny Smith for the Great Scala Cake-Off.

Every Tuesday Penny will dig into the baking background of her fellow Scala presenters and this week is the turn of Mark Forrest's Energy Boosting Forrest Flapjack.

Recipe:

500g rolled oats

250g butter

3 large tbsp of golden syrup (or 2 syrup and 1 of molasses)

100g of dried fruit - raisins, sultanas, chopped dates, apricots – whatever you fancy or is in the cupboard. You could also put in chopped almonds or walnuts or seeds if you like.

Melt the butter and syrup in a large pan

Add the oats then the dried fruit/nuts/seeds

Turn into a 35cm x 25cm greased baking tray and press into the corners

Bake for (exactly) 18 minutes at 180C

Score it as soon as it comes out.

Turn out when cool.

Mark's top tip: Score it with a sharp knife the second you remove it from the oven, so the pieces will turn out, otherwise you will need a hammer and chisel!
